Roll pastry sheets out into 12-inch squares, doing so on a lightly floured flat surface. Brush the lower half of each quarter with mustard. On the mustard-coated edge, center a sausage in the middle of the thin layer. Brush each top with each top inch with egg. Roll the pastry around the sausage and mold to create a tight seal. Sprinkle with poppy seeds or flaky salt, then cut each at an angle into thirds. Freeze the pigs in a blanket, uncovered, until they become firm, on a baking sheet lined with parchment paper.
Preheat oven to 400 degrees. Place rolls onto new sheet lined with parchment paper, spaced about one inch apart. Bake until the pastry turns fluffy and golden brown. This should take about 25 minutes. Serve while warm with a side of mustard.
